David & Nadia Sadie work in the Swartland, one of South Africa's most exciting wine regions. The region north of Cape Town is known for old dry-farmed vines on granite and slate soils — exactly the foundation that gives Chenin Blanc this tension and depth. Fermentation is carried out exclusively with natural vineyard yeasts, without interventions that would blur the character of the vintage.
