Château Canon La Gaffelière – Saint-Émilion with character. Nestled at the foot of the hillside south of the old town, on clay-limestone and clay-sand soils with high heat retention. Here, an unusual balance thrives: Merlot meets Cabernet Sauvignon, which ripens exceptionally well in the warm soils. This gives the wines power, aromatic complexity – and natural elegance. In the cellar: slow vinification, no excessive temperatures. Each batch of wine is individually aged on its fine lees, with minimal intervention. Entirely in keeping with the typicity of the vintage.
