Chateau Canon la Gaffeliere Saint Emilion Grand Cru

Château Canon La Gaffelière lies at the foot of the hillside south of the medieval town of Saint-Émilion. Its terroir consists of highly filtering clay-limestone and clay-sand soils with exceptionally high heat capacity. The near-perfect balance between Merlot and Cabernet Sauvignon, resulting from this soil composition, is rather atypical for the appellation. On the warm soils of Canon La Gaffelière, which promote early ripening, the Cabernet Sauvignon grapes can develop to their full potential, complementing the opulence of the Merlots with extraordinary power and aromatic complexity. This is the foundation of the natural elegance and finesse of Canon La Gaffelière wines. In accordance with the parcel-by-parcel vineyard management, the winery facilities allow for the vinification of perfectly homogeneous batches of grapes. To ensure that the grapes can reach their full potential, we emphasize a slow progression through the various vinification phases and avoid excessively high temperatures. Even during aging on fine lees, each batch of wine receives individualized, needs-based treatment to ensure that the characteristic qualities of each wine are expressed. Interventions are kept to a minimum and are entirely based on the typicity of each vintage.
