Chateau Canon la Gaffeliere Saint Emilion Grand Cru

Château Canon La Gaffelière is located at the foot of the slope south of the medieval town of Saint-Émilion. Its terroir consists of highly filtering clay-limestone and clay-sand soils with an exceptionally high heat capacity.

The almost perfect balance of the varietal composition between Merlot and Cabernet, which can be attributed to this soil condition, is rather atypical for the appellation. On the warm soils of Canon La Gaffelière, which favor early ripening, the Cabernets can, however, unfold excellently and thus complement the opulence of the Merlots with extraordinary power and aromatic complexity. The natural elegance and finesse of the wines of Canon La Gaffelière are based on this.

In harmony with the parcel-based vineyard management, the winery facilities enable the vinification of perfectly homogeneous batches of grapes. So that the grapes can optimally unfold their potential, we attach importance to a slow progression of the various vinification phases and refrain from excessively high temperatures. Also, during aging on fine lees, every batch of wine enjoys needs-based, individual processing so that the characteristic properties of each wine can be expressed. The interventions are limited to a minimum and are entirely geared towards the typicity of each vintage.
