Van Volxem is one of the defining wineries on the Saar. Roman Niewodniczanski took over the estate in 2000 and consistently developed it into one of Germany's most important Riesling addresses. The Scharzhofberg in Wiltingen is one of the most famous single vineyards in the world — deeply rooted slate, cool Saar climate, extreme steepness. The Pergentknopp refers to a specific parcel within this Grand Cru site, which Van Volxem vinifies as an independent selection.

In the glass, it shows a finely juicy, lively Riesling with a clear structure. Aromas of yellow stone fruit, a hint of quince, underneath a cool vein of slate. On the palate, a firm body, yet delicate — the acidity provides support without being sharp. A subtle extract sweetness forms the counterweight without breaking the freshness. The finish is long, salty, mineral — typical Saar.

Serving temperature: 10–12 °C.
Pairs with grilled char with herb butter, scallops with lemon foam, or a mature mountain cheese.

The Van Volxem winery is located in Wiltingen on the Saar, south of the city of Trier. The history of the winery dates back to the 3rd century and has been owned by Roman Niewodniczanski since 2000. The winery has a total vineyard area of 42 ha, which is divided into nine sites. The best sites include Wiltinger Gottesfuß, Scharzhofberger and Bockstein. The soils consist mainly of Devonian slate. For the production of Van Volxem wines, 96% Riesling grapes and four percent Pinot Blanc grapes are grown. Approximately 280,000 bottles of wine are produced annually.
