Pascal Jolivet's Sancerre Les Caillottes is a prime example of how closely soil and wine are connected – mineral, precise, with real substance.
Pascal Jolivet is one of the most trusted names in Sancerre. His winery in the heart of the Loire combines meticulous craftsmanship with modern cellar techniques. The Les Caillottes cuvée takes its name from the Kimmeridge limestone that characterizes around a third of Sancerre's soils – a fossilized marine subsoil of shells and limestone that gives the wine its characteristic salinity and structure.
In the glass, the Sauvignon Blanc displays yellow grapefruit, white currant, and fresh herbs, with a hint of nettle – typical of the variety and clear. On the palate, it has a firm, lively acidity without any unnecessary weight. The finish is long, cool, and salty – a nod to the chalky soil.
