Pascal Jolivet Pouilly-Fumé Terres Blanches

Pascal Jolivet allows his grapes to ripen as naturally and undisturbed as possible by the winemaker, so that the terroir and varietal character can find their maximum expression. The grapes for the Sancerre AOC grow on different terroirs: approximately 50% come from the calcareous-chalk soils of the Caillottes in Bué-en-Sancerre, 30% grow on the Terres Blanches, the highest elevation in the west of the appellation, where the soils are clay-limestone, and the remaining 20% ​​come from eastern Sancerre, from the famous silex soils of limestone and flint. All grapes are harvested, sorted, and vinified separately by parcel. The musts are spontaneously fermented in temperature-controlled stainless steel tanks without the addition of yeasts. Colour: bright, lustrous golden yellow. Aroma: full-bodied with juicy, aromatic fruit and a strong mineral note. Taste: full-bodied, concentrated and powerful on the palate with a beautiful balance of fruit and minerality and a clearly perceptible terroir character.

The French winery Pascal Jolivet is located in central France, two hours south of Paris. Founded in 1987, it initially comprised just eight hectares of vineyards. Today, Pascal Jolivet owns over 65 hectares of vineyards, spread across three distinct appellations (Sancerre, Pouilly-Foumé, and Touraine).
