Riesling "Muschelkalk"

Riesling from Muschelkalk limestone – that is Saale-Unstrut in its most direct form: clear, mineral, with an acid structure that supports the wine without dominating it.

The Pawis winery in Freyburg is one of the leading estates in the Saale-Unstrut region, Germany's northernmost wine-growing area. The family cultivates their vineyards on Muschelkalk (shell limestone) soils – a type of limestone that imparts a salty, cool minerality to the Riesling, rarely found in warmer regions.

In the glass, the "Muschelkalk" displays aromas of lemon zest and white peach, along with a hint of chalk and fresh herbs. The acidity is lively yet integrated – not sharp, but an invigorating line that extends into the long, slightly salty finish. Medium-bodied, with clear fruit and a dry style.

Serving temperature: 10–12 °C . Pairs well with pike-perch fillet with caper butter, goat cheese, or Asian dishes with ginger and lemongrass. Also a good choice as an aperitif on a warm evening.
