Pawi's Green Silvaner dry
Silvaner from Saale-Unstrut – that means: short growing seasons, a continental climate, and soils of variegated sandstone and shell limestone. Bernard Pawis is one of the region's most renowned wineries and demonstrates with this Grüner Silvaner what the grape variety is capable of there.
On the nose, ripe yellow mirabelle plum, pear, and an unexpected hint of cocoa – a combination that piques curiosity. On the palate, juicy pear fruit, a touch of apricot, and a light fruit sweetness that gives the wine a well-rounded character despite its dry style. The body is firm, with a smooth texture and real substance. The finish remains fresh and invigorating – not an abrupt end, but a good length.
- Food pairings: Goes well with asparagus dishes, white asparagus with hollandaise sauce, fried pike-perch or a creamy risotto with herbs
- Serving temperature: 10–12 °C
- Occasion: An uncomplicated white wine for everyday use, but with enough character for a special evening

Bernard Pawis took over his father's winery in 1998 – and built a modern winery in Freyburg a year later. The area grew to 16 hectares, and in 2001 he was admitted to the VDP. A clear sign of quality. After eight years, the family moved on: to the historic Zscheiplitz estate. In a year and a half, a new winery and a unique ambiance for wine tastings were created from the old horse stable (built in 1862). Since 2007, the old wine-growing tradition of the Zscheiplitz monastery has been revived here. Unstrut wines with history.
