The Pawis winery is one of the leading producers in the Saale-Unstrut region. The Freyburger Edelacker vineyard, with its limestone and sandstone soils, yields grapes of exceptional ripeness and mineral intensity. Pinot Blanc is the native variety here—not a compromise, but a matter of conviction.
In the glass, this is a full-bodied wine with aromas of pineapple, ripe pear, and mango, underpinned by a subtle nutty note that suggests oak aging. The body is dense, the acidity well-integrated, and the finish long and slightly spicy.
At the table: Robust seafood such as turbot or halibut, scallops with butter sauce, grilled veal. For a more festive occasion: quail breast, foie gras, or truffle risotto. Serving temperature 10–12 °C. Best enjoyed by 2029.
