
PX Delicado Cosecha
Pedro Ximénez as a sweet wine with real freshness — the PX Delicado Cosecha from Ximénez-Spínola shows the grape from a side that many do not know: not heavy and syrupy, but lively and structured.
Ximénez-Spínola is one of the most renowned wineries in the Jerez region of Andalusia and has been working consistently with the Pedro Ximénez grape for generations – from fresh Cosecha to Sherries aged for decades. The vines grow on Albariza, the region's chalky white limestone soil, which retains moisture and imparts its characteristic minerality to the grapes.
In the glass, peach and apricot meet ripe plum and pear, along with green apple and a hint of bitter almond. The sweetness is present, but the acidity balances it – no stickiness on the palate, but a long, fruity, and fresh finish.
Best served at 8–10 °C . Classic pairings: blue cheese, foie gras, or fresh fruit. As a standalone dessert wine after a meal, it needs no accompaniment.
