Petit Chablis, Pas si Petit, La Chablisienne

The name says it all – and is a little tongue-in-cheek: Pas si Petit means “not so small at all”, and the wine delivers on the promise of the label.

Behind the bottle is La Chablisienne , the most important winegrowers' cooperative in Chablis. Since 1923, it has been producing wines from the northernmost tip of Burgundy, where Kimmeridgian limestone and oyster fossils give the soil its renowned minerality. Today, the cooperative cultivates around a third of the entire appellation – with a commitment to quality that is palpable in the glass.

In the glass, it displays a clear straw yellow color. The nose offers lemon zest, green apple, and a hint of white blossom – fresh, precise, without any artificial perfume. On the palate, a lively, well-defined acidity enlivens it; this is complemented by a subtle chalky minerality so typical of Chablis. The finish is dry, lean, and invigorating – making you want another sip.

Recommendation: Serve briskly at 10–12 °C . Pairs perfectly with oysters, prawns with aioli, scallops, or a light goat cheese salad. It also makes a great, uncomplicated aperitif on warm evenings. Drink now – great aging potential isn't the goal here, but rather freshness and vibrancy.

La Chablisienne

In 1923, 250 winegrowing families joined forces. This led to the creation of La Chablisienne , the most important winegrowers' cooperative in the Chablis region.

Today, the members cultivate over 1200 hectares of vineyards – about a quarter of the entire Chablis region. The only star here is Chardonnay .

The wines are crisp, mineral, and taste of citrus and white blossoms. A piece of living winemaking history that you simply must taste.
