Chablis, La Sereine, La Chablisienne
Classic Chablis character without detours: La Sereine shows what the region is known for – cool fruit, limestone minerality and an acid structure that enlivens the palate.
La Chablisienne is a winegrowers' cooperative founded in 1923 in the heart of Chablis, with around 300 members today. Together, they cultivate roughly a quarter of the entire Chablis appellation – including plots on the characteristic Kimmeridge limestone, key to the region's typical minerality. La Sereine is their most approachable entry-level wine, vinified for freshness and drinkability.
In the glass: ripe citrus fruit, yellow apple, and a light hint of white blossoms. Medium-bodied on the palate, with lively acidity and the chalky minerality typical of Chablis on the finish. No oak aging – the wine remains lean, direct, and spicy in the finale.
Serving suggestion: Serve at 10–12 °C. Pairs well with oysters, mussels in white wine, pan-fried cod, or a simple goat cheese. Also a good choice as an uncomplicated aperitif. Drink now – no need for long cellaring.
In 1923, 250 winegrowing families joined forces. This led to the creation of La Chablisienne , the most important winegrowers' cooperative in the Chablis region.
Today, the members cultivate over 1200 hectares of vineyards – about a quarter of the entire Chablis region. The only star here is Chardonnay .
The wines are crisp, mineral, and taste of citrus and white blossoms. A piece of living winemaking history that you simply must taste.
