Mount Edelstone

The Mount Edelstone is one of Australia's great old Shirazes — not a loud wine, but one that hides its power behind precision.

Henschke has managed the Edelstone vineyard in Eden Valley (Barossa) as a family business since 1912. The vines grow on over 100-year-old, ungrafted rootstock — a relic that phylloxera never reached. The result is concentrated, deep-rooted grapes from one of the coolest parts of the Barossa, which gives the wine its structure.

In the glass, deep purple-red with ruby-red edges. On the nose, blackberry, blueberry, and plum, plus black, white, and green pepper, wild sage, fresh bay leaf, and thyme — a complex herbal profile typical of Eden Valley Shiraz. On the palate, lush and spicy: black and blue fruits, dark licorice, freshly cut herbs. The acidity is present but elegantly integrated; the tannins are velvety and ripe. The finish is long and detailed.

Serving temperature: 16–18 °C. Pairs with braised lamb rack with rosemary, beef brisket, or mature hard cheese like Pecorino stagionato.
