Mount Edelstone

Mount Edelstone is one of Australia's great old Shirazes — not a loud wine, but one that hides its power behind precision.

Henschke has cultivated the Edelstone vineyard in the Eden Valley (Barossa) since 1912, a family estate. The vines grow on over 100-year-old, ungrafted rootstock—a relic that never reached the phylloxera aphid. The result is concentrated, deep-rooted grapes from one of the coolest parts of the Barossa, which gives the wine its structure.

In the glass, a deep purple-red with ruby-red edges. The nose offers blackberry, blueberry, and plum, along with black, white, and green pepper, wild sage, fresh bay leaf, and thyme—a complex herbal profile typical of Eden Valley Shiraz. On the palate, it is rich and spicy: black and blue fruits, dark licorice, and freshly cut herbs. The acidity is present but elegantly integrated; the tannins are velvety and ripe. The finish is long and detailed.

Serving temperature: 16–18 °C. Drinking window: now until 2035+. Pairs well with braised lamb loin with rosemary, beef brisket, or mature hard cheeses such as stagionato pecorino.
