Chardonnay cask

Dönnhoff is primarily known for its Riesling – which makes what the winery does with Chardonnay all the more interesting. The Chardonnay Stückfass grows on the Höllenpfad vineyard in Oberhausen, a site with red sandstone soils that impart a dense, mineral structure to the wine.

Fermented and aged in large wooden casks (1,200 liters) — no new oak, no toasty aromas, but slow oxidation and natural texture. The result is a Chardonnay with both power and precision: ripe pear and white peach, a hint of hazelnut, and a distinctly saline, lingering finish. The acidity is firm but integrated — not a wine for immediate consumption, but one that will gain further depth with one to two years of cellaring.

Serving suggestion: Served at 12–13 °C, it pairs well with veal sweetbreads, pike-perch on leeks, or a mature Comté cheese. Drinking window 2025–2030.
