Vin Santo is a full-bodied, fragrant dessert wine from Tuscany. The grapes used in Vin Santo are always of the highest quality. This is also why Vin Santo is not produced every year. After harvesting, the grapevines are hung in a barn for three to four months to allow the grapes to dry. This drying process increases the sugar content of the grapes. The wine is then aged for several years in oak barrels, completely sealed from the air. The color is a warm amber yellow, the bouquet full and complex with the scent of raisins combined with aromas of apricots, figs, dried fruits, and a subtle hint of oak. The taste is full and warm, slightly sweet, silky, and culminates in a wonderful, pleasantly warm finish.
