Castelli di Grevepesa lies in the Greve Valley, precisely where Tuscany becomes most densely populated: rolling vineyards between Florence and Siena, Sangiovese vines on calcareous Galestro soil, the classic territory of Chianti Classico. Since 1965, the cooperative has united winegrowing families from the Chianti region, bringing their grapes together under a shared commitment to quality – from simple everyday wines to Riserva aged for several years in oak barrels.

Besides Chianti Classico, the winery cultivates one of the region's oldest traditions: Vin Santo . After harvesting, Trebbiano and Malvasia grapes are dried for months on bamboo racks or wooden trellises until the berries are concentrated and raisin-like. Only then does the slow fermentation begin in small Caratelli barrels made of chestnut or cherry wood – often lasting three to six years. The result is a sweet wine of deep amber color, with aromas of dried apricot, walnut, and a hint of orange peel.

Traditionally, Vin Santo is served with cantuccini, which are dipped in the wine – a ritual that is part of the end of every meal in Tuscany. However, it also pairs well with blue cheese or as an accompaniment to a quiet evening without any particular occasion.
