Domaine des Perdrix is located in Premeaux-Prissey, a small village just south of Nuits-Saint-Georges, where the Côte de Nuits boasts its most concentrated Pinot Noir terroirs. The Devillard family has managed the 12-hectare estate since 1996, which includes the Premier Cru "Aux Perdrix," almost entirely owned by the Domaine and giving the winery its name.
In the cellar, craftsmanship dictates the pace: hand-harvesting, gentle destemming, followed by 18 months of aging in oak barrels. The proportion of new oak increases with the vineyard site—30% for the village wines, 60% for the Premier Crus, and up to 90% for the Grand Crus. The result is wines that clearly reflect the terroir of the Côte de Nuits: dark cherry, earth, a subtle spiciness, and the structure typical of Nuits-Saint-Georges, which carries aging potential for many years.
