modern Appassimento from the heart of Sicily

Camivini stands for a new interpretation of Appassimento — that traditional process in which grapes are dried after harvest before they go into fermentation. With the Tank line, the Sicilian winery has rethought this process: instead of long drying times in open rooms, Camivini relies on controlled conditions in the tank, which preserve freshness and structure without sacrificing the characteristic density of Appassimento.

The wines show what Sicily can do beyond over-ripeness and heavy alcohol: a rich texture with aromas of dried fruits and a hint of raisin, carried by a residual sweetness that never seems intrusive. Structure and harmony are balanced – the result is a style that invites you to drink without exhausting you.

Anyone who has previously found Appassimento too heavy or too sweet will find an accessible alternative here: dense enough for winter evenings and hearty dishes, lively enough for everyday life. Recommendation: with braised lamb, mature hard cheeses, or dark chocolate.
