Ziereisen Pinot Gris dry "Jasper"
Ziereisen's Jaspis is not an easygoing Pinot Gris—it's a wine that needs time and rewards it. Named after the gemstone that literally occurs in the vineyard soil, it reflects its origin directly in the glass.
The Ziereisen winery is located in the southernmost part of Germany, in the Markgräflerland region near the Swiss border. The vines for the Jaspis wine have been growing on Jurassic limestone with a clay-loess-iron topsoil since 1958–1962—a soil that imparts a pronounced mineral tension to the wine. Spontaneous fermentation, extended lees aging in large wooden barrels, no fining, no filtration. This is not by chance, but by design.
In the glass, this Pinot Gris reveals itself with substance: ripe pear and yellow plum, along with nuances of beeswax and flint. The palate is dense, the acidity clearly defined without harshness, the finish long and spicy with a hint of roasted hazelnut. Not a light aperitif Pinot Gris, but a white wine with the character of a Burgundy.
Serving suggestion: 12–14 °C. Best enjoyed by at least 2035. Pairs well with sweetbreads, grilled pike-perch, mature Comté cheese, or a risotto with porcini mushrooms.
