Zabu Grillo Sicilia
The grapes for the Zabù Grillo grow on the island of Sicily in the hills near Lago Arancio. These are located in the southeastern part of the island near Sambuca di Sicilia, where the relatively young winery Vigneti Zabù has its cellar. The vines for this wine thrive on loamy soil that retains water very well, so that the vines survive the hot summer well. This wine is made 100% from the Grillo grape variety. After a 10-12 day temperature-controlled maceration period, the mash is pressed and the must is fermented in stainless steel tanks. It is then bottled and aged for a few more months in the bottle.
This very fruity and fresh Grillo from the Cantine Vigneti Zabù is a very beautiful white representative of Sicily. The nose shows the freshness of lemon and yellow flowers. On the palate, it is mineral with a rich, full body.

How does the Zabu Grillo Sicilia taste?
Dry and fresh, with citrus aromas and a hint of yellow blossoms on the nose. On the palate, it shows minerality with a full body typical for the grape variety — not a lean summer wine, but one with substance.
Is the Grillo really dry or does it have residual sugar?
It is vinified dry. The fruit appears lively due to the citrus notes, but there is no noticeable residual sugar.
What does the wine pair best with?
Classically with fish and seafood, but also with poultry, Sicilian antipasti, or pasta with a light sauce. The full body also handles stronger sauces.
At what temperature should I serve it?
Best between 8 and 10 °C — i.e., well-chilled, but not ice-cold. This brings out the minerality and fruit most clearly.
How was the wine vinified?
After a 10- to 12-day maceration period, the must is fermented under temperature control in stainless steel tanks and then aged for a few months in the bottle — no use of wood, hence the fresh, clear profile.
How long can I store the wine?
Stored cool, dark, and lying down, it remains stable. As a fresh, fruit-forward white wine, however, it unfolds its character best while the citrus notes are lively — not intended for the long haul.
