The grapes for this wine grow on the island of Sicily in the hills near Lago Arancio. This lake is located in the southeastern part of the island, near Sambuca di Sicilia, where the relatively young Vigneti Zabù winery has its cellars. The vines thrive in clay soil that retains water very well, allowing them to withstand the hot summers. After a gentle harvest, the destemmed grapes are macerated for 10-12 days under temperature control, and the must is fermented in French and American oak barrels after pressing. Following fermentation, the wine ages for eight months in the barrels before bottling and then rests for another six months in the bottle before release. The Impari displays an almost endless array of aromas on the nose. Ripe dark fruits, such as plums, various dark berries, and elderberry, complement each other with spicy notes of allspice, licorice, dark chocolate, and coffee. On the palate, a veritable explosion of flavors unfolds. The fruity and spicy components emerge beautifully and blend seamlessly with the soft, velvety tannins, creating a long, lingering finish.
