The Yamazaki 12 Year Old Pure Malt is a blended malt – a combination of different malt whiskies from the Suntory distilleries, with the Yamazaki whisky at its heart. Japan meets Scotland: Suntory founder Shinjiro Torii built the Yamazaki distillery near Kyoto in 1923, in a region that has attracted brewers and sake producers for centuries due to its water and climate quality.
In the glass, the 12-year-old displays the typical hallmarks of the house: maturation in a blend of Mizunara oak, ex-bourbon, and ex-sherry casks results in a complex aromatic profile. Honey, ripe pear, and apricot take center stage, followed by sandalwood and a subtle hint of coconut. The finish is silky with a delicate oak spice – a style that comes across as finer and more restrained than many Scottish whiskies of the same age.
Neat at room temperature is the classic way to start – the aromas unfold slowly and reward patience. Alternatively, serve it over large ice cubes or as a highball with still water: the most common drinking method in Japan, which emphasizes the freshness of the fruit aromas.
