Steingrubenberg Chardonnay GG
Chardonnay that takes its time: 30 months of lees aging in the barrel, then another six months in stainless steel — the result is a white wine with depth and clear origin.
The Steingrubenberg lies on porous volcanic rock. This mineral-rich substrate noticeably shapes the wine: the grapes are selected by hand, only fully ripe harvest enters the cellar. Fermentation is spontaneous, without cultured yeasts — the must decides for itself when it starts.
In the glass, ripe peach and citrus zest appear, behind it smoke notes, nut, and a dark, almost stony minerality. The long lees time gives the wine a creamy texture without making it heavy. The finish is long and spicy.
Drinking temperature: 12–14 °C.
Pairs with veal sweetbreads with morels, mature Comté, or a lobster bisque.
