Steingrubenberg Chardonnay GG
Chardonnay that takes its time: 30 months of lees aging in barrels, followed by another six months in stainless steel — the result is a white wine with depth and clear origin.
The Steingrubenberg vineyard lies on porous volcanic rock. This mineral-rich subsoil noticeably influences the wine: the grapes are hand-selected, and only fully ripe grapes make it to the cellar. Fermentation occurs spontaneously, without cultured yeasts—the must decides for itself when to start flowing.
In the glass, ripe peach and citrus peel are evident, followed by smoky notes, nuttiness, and a dark, almost stony minerality. The extended lees aging gives the wine a creamy texture without making it heavy. The finish is long and spicy.
Serving temperature: 12–14 °C. Drinking window: now until 2030.
Pairs well with veal sweetbreads with morels , aged Comté cheese or a lobster bisque .
