Sibona La Grappa di Nebbiolo

A clear, unfiltered grappa made from the pomace of the Nebbiolo grape – the grape variety used in Piedmont to produce Barolo and Barbaresco. Sibona has been distilling in Canale d'Alba in the Roero region, directly opposite the Langhe area, for generations using the traditional alembic method.

The Sibona distillery is one of Piedmont's artisanal producers that rely on gentle, low-pressure distillation – slow, to preserve the delicate aromas of the Nebbiolo grape instead of burning them. The Nebbiolo pomace yields significantly more substance than lighter grape varieties: tannic weight, structure, and a certain depth.

In the glass, the grappa reveals notes of white flowers, a hint of dried violets, and mild spice – floral traces typical of Nebbiolo. The texture is full-bodied, the finish warm and medium-long with a slight bitterness in the aftertaste.

Enjoy it neat at room temperature after a meal – classically as an Ammazzacaffè after an espresso. For a milder flavor, serve it at 14–16 °C in a small tulip glass, which concentrates the aromas.

Sibona

Sibona – an Italian distillery in Piedmont, near Alba. Founded at the end of the 19th century by Domenico Sibona. A special detail: Sibona holds distilling license No. 1 – granted only to distilleries with a particularly rich tradition in Italy. Their grappas are made exclusively from grapes grown in the Langhe and Rohero regions at altitudes of 150 to 250 meters. Pomace from Nebbiolo, Chardonnay, Moscato, or Barbera grapes is gently distilled and then aged in steel or wooden barrels. The result? Three consecutive awards for "Best Distiller of the Year" at the International Wine & Spirit Competition in London. Italian craftsmanship at its finest.
