Weingut Schäfer-Fröhlich in Bockenau has been one of the top addresses in the German Riesling scene for years. Tim Fröhlich cultivates the steep slopes around Monzingen biodynamically, ferments spontaneously in wooden barrels, and lets the wines mature on the lees – without haste. The Frühlingsplätzchen lies on weathered porphyry and clay slate, soils that give the Riesling its characteristic herbal spice and saltiness.

In the glass, the GG shows a taut aroma structure: lime zest, white peach, herbal notes like thyme and bergamot, underneath a clear slate tone. The acidity is precise, never shrill – it carries the wine and holds it together for years. Medium body, dense texture, salty-mineral finish with remarkable length.

Recommended temperature: 12–14 °C.
Pairs with grilled sea bass with caper butter, scallops, goat cheese, or a classic Wiener Schnitzel.
