SAUVIGNON BLANC Limestone and Chalk TEMENT WINERY

SAUVIGNON BLANC Limestone and Chalk TEMENT WINERY
Sauvignon Blanc from Southern Styria – and one that shows what limestone soil really means: not a polished fruit bomb, but a wine with a mineral backbone and clear origin.
Weingut Tement is one of the defining names of the Styrian wine scene. The family winery in Berghausen has been vinifying Sauvignon Blanc at the highest level for decades – biodynamically managed, with deep knowledge of their own sites. This estate wine combines grapes from 55 individual parcels, all hand-picked, all grown on mineral limestone soils. Spontaneous fermentation, gentle aging in steel tanks – no wood to overlay the fruit.
In the glass, gooseberry, lemon zest, and a hint of white currant dominate. Underneath lies a fine chalky spice that gives the wine its special depth. The acidity is present, but never sharp – rather taut and invigorating. The finish is long, salty-mineral with an aftertaste of herbs.
- Food: Goat cheese, grilled asparagus, ceviche, seafood, or a classic Viennese fried chicken
- Temperature: 10–12 °C
