Robert Mondavi Twin Oaks Cabernet Sauvignon

The Cabernet Sauvignon grapes for Mondavi's Twin Oaks are harvested at optimal ripeness and with a balanced acid-sweetness, and immediately transported to the winery. The grapes are gently crushed, and the must is fermented on the skins in stainless steel tanks at controlled temperatures. To capture the expressive varietal character in the wine, the Cabernet Sauvignon is pressed after fermentation and aged in French and American oak from various cooperages. This imparts even more aromatic richness, complexity, and structure to the wine, finishing it with a delicious array of spicy-sweet oak notes. The wine displays a deep, lustrous purplish-red color, tending towards violet, and unfolds a seductive bouquet of ripe blackcurrants, cherries, and cocoa, underpinned by subtle oak influences. Its juicy fruit and velvety tannins give aromatic richness and structure on the palate with a lasting length in the finish, round and harmoniously balanced with a hint of wild berry spice and plenty of smoothness.
