The Rebholz winery in Siebeldingen is one of the leading wineries in the Palatinate region. For decades, the family has worked with minimal intervention in the cellar, spontaneous fermentation, and extended lees aging—methods that highlight the terroir character rather than overriding it.

In the glass, the Sauvignon Blanc displays herbs, green grass, and grapefruit—the typical varietal aromas, but grounded by a salty minerality that distinguishes this wine from simpler examples. Medium-bodied, with lively acidity and a dry finish with a spicy aftertaste. Spontaneous fermentation adds a subtle yeasty depth, making the wine more complex than its fresh aroma profile initially suggests.
