Bickel-Stumpf cultivates the steep Kapellenberg Mönchshof site near Thüngersheim — a shell limestone terroir that gives the Silvaner its characteristic tension between fruit and minerality. The Grosses Gewächs stands for the highest quality level of the VDP: hand-picking, strict yield regulation, long aging in the cellar.
On the nose, herbal and slightly mushroomy tones, plus a hint of bacon and ripe yellow fruit — mirabelle, Williams pear — with a fine suggestion of roasted onions, which gives the profile a savory spice. On the palate, juicy and powerful, with nutty and slightly dried plant notes. The acidity is lively but never intrusive; a chalky minerality runs through to the long finish, which ends with delicate melt and real bite. Firm structure, yet never heavy.
Serving suggestion: 12–14 °C. Pairs with sweetbreads, zander on lentils, mature Gruyère, or white asparagus with hollandaise sauce.
