Diciotto Colline Primitivo di Manduria Riserva DOC – Torrevento (Italy, Apulia)
The wine is the centerpiece of the set. Torrevento ages the Primitivo from fully ripe grapes from the Manduria hinterland in wooden barrels; the Riserva aging tames the power of the grape variety. In the glass, a deep dark color, aromas of blackberry and plum, soft tannins, and a long cocoa finish. The 2018 vintage received 93 points in Falstaff and Gold at the MundusVini 2025.
Fragassi Sugo Pronto Arrabbiata – Verde Abruzzo (Italy, Abruzzo)
Tenuta Fragassi produces sauces according to traditional recipes in the Abruzzo region. The arrabbiata consists of 87.7% tomato puree, plus extra virgin olive oil, onions, spicy chili peppers, and garlic. The result: fruity tomato with distinct heat and garlic seasoning.
Fusilli – Viani (Italy)
The twisted spiral shape has a purpose: the sauce gets caught in the grooves, and every forkful carries more flavor. It is best to cook them al dente, so the spirals retain their bite and can withstand even hearty sauces.
Pairs well with: Fusilli with the arrabbiata, freshly ground pepper, and a piece of aged Pecorino on top. The Primitivo, with its dark fruit and soft tannins, meets the heat of the sauce. If you want to tame the chili a little, serve the wine at about 16–18 °C. Goulash or oven-roasted vegetables with tomato also go well with this wine.
