Fleur de Sel from the salt pans of Ibiza – harvested in a nature reserve where sun, dry air, and constant wind create the ideal conditions for the formation of delicate crystal flowers. Only under these precise climatic conditions does the wafer-thin layer of salt form on the water's surface, which is then skimmed off by hand.
The fine flakes dissolve slowly on the tongue, leaving a mild, mineral flavor without the harsh sharpness of ordinary table salt. Use as a finishing salt – not for cooking, but as a final touch: sprinkled over grilled fish, ripe tomatoes with olive oil, dark chocolate, or a piece of Manchego cheese. It also pairs well with a glass of dry Manzanilla sherry.
