A Single Malt from Swabia that breaks with the choice of grain: for the Emmer Edition III, the finch whisky distillery distills from self-grown black emmer, an ancient wheat variety. Eight years of maturation in selected wine barrels, bottled at cask strength.

The distillery is located in the Swabian Highlands and handles everything from grain cultivation to bottling in-house. You can notice this in the clear, balanced profile, which does not tip into the heavy despite the cask strength.

On the nose and palate, caramel, vanilla, biscuit, and raisins are in the foreground. Added to this is the structure of the Limousin oak. The finish is warm and long, with subtle sweetness and clear cask presence.

Recommendation: neat from a bulbous tasting glass and with some time to open up. Dark chocolate or dried dates, which pick up on the roasted-sweet notes, go well with it.
