Château de Selle is the flagship of Domaines Ott — a name that has stood for precise, site-specific rosé wines in Provence for over a century. The winery is located in the hinterland of the Côtes de Provence, on barren limestone soils that give the vines little, thus forcing them to produce deeper-rooting, more concentrated grapes. The organic certification (FR-BIO-01) underscores the respect for this fragile terroir.

In the glass, the Grenache-dominated rosé shows its typical light, almost pearlescent robe with golden reflections — the visual trademark of the house. On the nose, fresh white peach fruit, citrus blossom, and a mineral undertone reminiscent of dry limestone. On the palate, dry and taut, with lively acidity and a long, salty-spicy finish that clearly identifies its origin.

A well-chilled glass at 10–12 °C — then it unfolds best with grilled sea bass with fennel, a bouillabaisse, or a summery goat cheese salad with Provençal herbs.

Domaines Ott

Domaines Ott is a French winery located in Provence, in the sun-drenched south of the country. It was founded in 1836 by Marcel Ott and is today owned and managed by Jean-François and Christian Ott – for generations, the family has thus remained true to its own ambition of creating wines of exceptional elegance.

The winery consists of three characterful domains: Château de Selle, Clos Mireille, and Château Romassan, which together have a vineyard area of more than 200 hectares.
