Château Pédesclaux AOC Pauillac 5° Cru Classé

Pauillac is the epicenter of classic Bordeaux — three of the five Premiers Crus grow here, and the appellation defines the style of the entire Médoc. Château Pédesclaux, Cinquième Grand Cru Classé of 1855, is in the immediate vicinity of Mouton Rothschild and shares its terroir of deep gravel over limestone subsoil. Since 2008, significant funds have flowed into the vineyard and cellar — the estate is one of the Châteaux that now support its rank from the classification with substantial craftsmanship.

In the glass, the wine shows what Pauillac stands for: Cabernet Sauvignon with black cherry, blackberry, and a hint of graphite in the background. The tannin structure is powerful and structured, the acidity firm enough to give the body contour — not a soft, pleasant style, but a wine with backbone and mineral depth in the finish.

It is best served at 16–18 °C, preferably decanted an hour before drinking. Classic accompaniment: rack of lamb with a herb crust, entrecôte, or strong hard cheese like Comté or Cantal.
