Château Olivier AOC Pessac-Léognan Rouge GC Classé

Château Olivier is one of the oldest estates in Bordeaux — the facility dates back to the Middle Ages, and the Black Prince, Edward of Woodstock, is said to have hunted here in the 14th century. What ends up in the glass today is the result of profound investments in the 1990s: soil analyses, clearing, and replanting. Since then, the estate has been one of the most reliable addresses in the Pessac-Léognan appellation — classified as a Grand Cru Classé de Graves.

The red is based on Cabernet Sauvignon, supplemented by the Bordeaux grape varieties typical of Pessac-Léognan. On the nose, it shows dark cassis, cedar wood, and a hint of graphite — the mineral signature of the Graves soils made of gravel and sand over clay. On the palate, structured tannins, medium fullness, a long, slightly earthy finish. Not a heavyweight, but a wine with backbone and clear origins.

Best served at 16–18 °C. Pairs well with leg of lamb with herbs of Provence, aged Cantal, or a classic Bordeaux entrecôte. Those who have a little patience will be rewarded with further maturity.
