In the hamlet of Cas Canar, a shoe factory was built in the 20th century. Since 2016, the buildings have been converted into a winery, climate-controlled, and equipped with state-of-the-art technology. The Bodega 65 team took over the winery at the end of 2023 and set about perfecting the process. Important quality-related changes were implemented, including grape cooling, gentle transport of the grapes, use of gravity flow, consistently cooled and airtight fermentation, and much more. Thomas Wambsganss is personally responsible not only for the processing of the grapes but was also the architect of a process chain that guarantees artisanal quality even with a capacity of 100,000 liters.

In the hamlet of Cas Canar in the interior of Mallorca stands an unusual building: a former 20th-century shoe factory that has been gradually converted into a winery since 2016. Air-conditioned halls, modern cellar technology, and a consistently well-thought-out process chain have turned the industrial building into a place of precise viticulture.

Since the end of 2023, Thomas Wambsganss has been responsible for Bodega65 – and has restructured the quality work from the ground up. Grape cooling immediately after harvest, gentle transport, gravity processing instead of pumps, airtight and constantly cooled fermentation: every step in the cellar is designed to bring the potential of the Mallorcan grapes into the bottle as unadulterated as possible.

The result is wines that, despite a capacity of up to 100,000 liters, carry the character of a manufactory – artisanal in execution, clear in origin, shaped by the warmth and the terroir of the Balearic Islands.
