Tonno all'olio d'oliva

Tonno all'olio d'oliva is preserved tuna according to classic Italian tradition: hand-cut and preserved in olive oil. Only yellowfin tuna is used, whose firm flesh is particularly suitable for this method of preparation.

The pieces are cooked slowly at low temperatures—this preserves the structure and retains the natural meat flavor. Juicy, tender texture, clear, savory aroma, long, meaty finish. No mealy texture, no overpowering fishy smell.

Enjoy it on its own on toasted bread with fleur de sel, over a warm cannellini bean salad with capers, or as a base for vitello tonnato. A dry Vermentino di Sardegna or a mineral Soave pairs well with it—both provide enough acidity to cut through the olive oil without overpowering the tuna.
