Les Folies de la Marquetterie is a single-vineyard cuvée from Taittinger – exclusively from grapes around the Château de la Marquetterie near Épernay, which has belonged to the Taittinger family since 1932.
In the glass, ripe pome fruit, white peach, and quince, underpinned by vanilla and toasted brioche. The texture is full-bodied, the acidity well-integrated, the finish long and slightly spicy.
Pairs with lobster with butter sauce, sweetbreads, or mature Brie de Meaux. Serving temperature: 9–11 °C.
