In the glass, the wine shows the cool elegance typical of shell limestone: quince, white peach, and a salty-mineral undertone that defines the long finish. The acidity is taut but integrated — not a charmer, but a wine with backbone and aging potential.
Best served at 10–12 °C. Pairs with zander with beurre blanc, asparagus with hollandaise sauce, or mild goat cheese.
