A Sauvignon Blanc that takes its time: Pierpaolo Pecorari's Kolaus Riserva from Friuli combines the freshness of the grape variety with real depth from wooden barrel and bottle aging.
Pecorari's winery is located in the Collio and Isonzo DOC in northeastern Italy—a region known for its white Riserva wines with above-average aging potential. The Kolaus is one of Pecorari's flagship wines: aged in oak barrels for 11 months, followed by 7 months of bottle aging. Not a wine for quick drinking, but a wine with character.
Deep golden yellow in the glass. The nose initially offers spicy herbs—dried sage, a hint of bay leaf—followed by ripe aromas of yellow peach and elderflower, which take on a balsamic character due to the oak aging. Medium-bodied on the palate, well-integrated acidity, long mineral finish with a touch of beeswax and honey.
