The Old Harvest Pedro Ximénez from Ximénez-Spínola is not a wine in the classic sense, but a highly concentrated sweet wine made from sun-dried Pedro Ximénez grapes from the Sherry Triangle in Andalusia. Deep amber-brown in the glass, dense and viscous.

Ximénez-Spínola is one of the most renowned houses in Jerez and is known for handcrafted Pedro Ximénez wines of extraordinary density. After the harvest, the grapes are dried on straw mats in the sun, which extremely concentrates the sugar and aromas — a laborious process that is hardly practiced anymore.

In the nose, roasted hazelnut, nougat, dates, and a hint of licorice. On the palate, a velvety, almost oily texture unfolds with intense sweetness, which is kept in balance by a subtle spice and mineral depth. The finish is long, warm, and persistently nutty.

Classically with vanilla ice cream — the contrast of cold and warm, creamy and sweet is hard to beat. Equally convincing with dark chocolate, blue cheese like Cabrales, or as the conclusion of a meal without further accompaniment. Serving temperature: 12–14 °C, slightly chilled, poured in small quantities.
