An everyday white wine that needs no lengthy explanation – fresh, aromatic, and ready to drink. The Hase from Kühling-Gillot is the uncomplicated introduction to the world of one of Rheinhessen's most renowned biodynamic wineries.

Kühling-Gillot has cultivated its vineyards around Oppenheim and Nierstein according to biodynamic principles for years – Demeter-certified, with a consistent avoidance of synthetic pesticides. The hare symbolizes the approachable side of the winery: no oak, no long maceration, no intervention in the cellar that masks the natural character of the grape variety. Sauvignon Blanc in Rheinhessen exhibits a somewhat softer acidity than, for example, in the Loire – a riper fruit profile, less sharp.

In the glass, gooseberry and white peach dominate, complemented by citrus zest and a fresh apricot note in the background. The palate is light and lively, the acidity invigorating without being overpowering. No heavyness, no oak, a long fruity finish with a green, slightly herbal note – typical of the grape variety.

Kühling-Gillot Winery

Carolin and Oliver Battenfeld's winery is located on the Rhine terrace. Kühling-Gillot is distinguished by its organic farming practices, which have been expanded to include biodynamic methods since 2005. For Carolin and Oliver Battenfeld, the European hare symbolizes fertility and joie de vivre. In recent years, the winery has developed into one of the absolute top producers in Germany. The slate soil of the famous Roter Hang (Red Slope) around Nierstein and Nackenheim produces wines whose blend of delicate fruit and vibrant minerality represents something of an ideal example of a great dry wine.
