Justino's Madeira Vinhos is one of the most traditional houses on the Atlantic island off the coast of Morocco and is now the largest bottler on the island by volume. The Fine Dry stands for the classic style of the house: The Complexa grape variety provides the foundation, the Estufagem — a controlled heat treatment — gives the wine its oxidative character and its extraordinary durability.
In the glass, it shows light yellow-brown, on the nose dried apricot and a hint of walnut. Dry on the palate, with the acid-driven freshness that makes Madeira so invigorating, and a light caramel tone in the finish. This acidity is not a flaw, but the trademark of the island.
Served at 14–16 °C, it is suitable as an aperitif with olives, Manchego, or tapas — but also with chicken liver terrine, a rich consommé, or as a base for classic Madeira sauces for calf's liver.
