H3 Horse Heaven Hills Merlot
The Merlot grapes for H3 Horse Heaven Hills are harvested at the end of September and immediately brought to the winery. Winemaker Juan Munoz-Oca leaves approximately 30% of the grapes whole, while the remainder are gently crushed. All the harvested grapes are then fermented on the skins for about seven to fourteen days. The wines then undergo malolactic fermentation (in stainless steel tanks and oak barrels), are blended, and finally mature for 14 to 18 months in new (33%) and used (67%) American and French oak barrels. Soil: low-fertility, but well-drained sandy soils with low water retention, allowing for precise growth control. Warm cherry red with a purplish sheen. Aroma: aromatic bouquet of ripe blackberries and spices. Taste: on the palate, the Horse Heaven Hills Merlot also reveals its lush berry fruit, subtly underpinned with slightly smoky notes, velvety smooth in the finish, very juicy and extremely seductive with fine hints of dark cocoa.

How does the H3 Horse Heaven Hills Merlot taste?
Ripe blackberries and spices in the scent, on the palate lush berry fruit with slightly smoky notes and a hint of dark cocoa. The finish is velvety and juicy — a full-bodied, dry Merlot with plenty of substance.
What does this wine pair best with?
The dark fruit and soft tannins make it a reliable companion for braised dishes, leg of lamb, or roast beef. It also works well with hearty mushroom dishes or a ripe hard cheese.
At what temperature should I serve it?
Ideally at 16–18 °C. Take it out of the cellar shortly before pouring or remove a stored wine from the refrigerator about 20 minutes before opening if it was kept too cold there.
How was this Merlot aged?
After the mash fermentation and malolactic fermentation, the wine matures for 14 to 18 months in American and French oak barrels — one third new, two thirds used. This explains the subtle smoky note and the round texture.
How should I store the bottle?
Lying down at a constant 12–16 °C, dark and free of vibrations. A cool cellar or a wine refrigerator are ideal. You should avoid strong temperature fluctuations.
The Winery
Columbia Crest was founded in 1983 and is a US winery located in Washington State, three hours' drive from Seattle. Situated on the Columbia River and protected by the Cascade Mountains, the region offers perfect conditions for viticulture.
In addition, these conditions are favored by the climate, which is characterized by a controlled water supply and sufficient hours of sunshine.
A variety of grape varieties are grown for the production of the wines on a vineyard area of 2500 hectares. These include Merlot, Cabernet Sauvignon, Malbec, Chardonnay, Semillon, Sauvignon Blanc, Cabernet Franc, and Syrah.
