The unique aspect of the "Doppio-Paso" method lies in the fact that, after the first fermentation, the wine is returned to the skins for a second fermentation. During this "double pass" (Italian: doppio passo), further color is extracted from the skins. This promotes a better development of aromas and gives the wine a seductive touch of sweetness. The result is a wonderfully smooth, full-bodied, and exceptionally nuanced wine with irresistible flavor intensity. Verdict: "Absolutely delicious!" The Doppio Passo Primitivo Puglia displays a wonderful mix of herbs, spices, and fruit on the nose. On the palate, it is immediately juicy, but without that heavy, meaty body that "sticks to your cheeks." None of that. Instead, it offers fantastic flavor density with many facets, unobtrusive tannins, and a lingering fruity finish.

Fruity, light Primitivo without any airs and graces
This Primitivo is excellent as a table wine with pasta and meat dishes. Very fruity, almost sweet and dry on the finish. A nice glass, although it could be offered for 1-2 euros less.

How does the Doppio Passo Primitivo taste – is it sweetish or dry?
It is dry, but thanks to the Doppio Passo method – where the wine is fermented a second time on the grape skins – it feels pleasantly soft and has a slight hint of fruit sweetness on the finish. Herbs, spices, and juicy fruit define the profile, and the tannins remain unobtrusive.
What does the wine pair best with at the table?
It is a reliable companion to hearty dishes: Salsiccia, grilled steak, pasta with a rich sauce, or pizza. It also pairs well with a mature Pecorino – the fruit density of the wine holds its own against spicy cheese.
At what temperature should I serve it?
Ideally between 16 and 18 °C. This is cooler than room temperature – serving it too warm risks the alcohol coming to the fore and the fruit appearing flat.
Is this a wine for everyday use or rather for special occasions?
Clearly an everyday wine – uncomplicated, without rough edges that require concentration. It fits a Friday night with pizza just as well as a spontaneous barbecue. Not a wine that needs to be decanted.
How long can I store it if I don't open it immediately?
The Doppio Passo is designed for imminent enjoyment, not long-term storage. Stored in a cool, dark place lying down, it will easily last until the best-before date – planning for decades would not benefit its character.
How much alcohol does the wine have, and can you taste it?
It has 13% ABV – rather moderate for an Apulian Primitivo. Due to the juiciness and fruit density, it feels round and balanced, not hot or heavy. A well-chilled finish helps keep this in balance.
