Château Haut-Bailly is one of the most reliable addresses in Pessac-Léognan — a Grand Cru Classé de Graves that has stood for elegance instead of power for decades. The winery is located south of Bordeaux on well-drained gravel and sand soil, which gives Cabernet Sauvignon and Merlot their characteristic finesse.

The 2012 shows an intense ruby red with violet reflections in the glass. The cuvée of 60% Cabernet Sauvignon and 40% Merlot unfolds a bouquet of dark forest berries, cassis, and a hint of cedar wood. On the palate, the wine appears structured but without harshness — fine tannins, a lively acidity, and a long, subtly spicy finish.

With sufficient potential for further aging in the cellar. Serving temperature 17–18 °C, feel free to decant an hour beforehand. Classic accompaniment: rack of lamb with herb crust, entrecôte, or ripe Comté.
