Château Certan de May AC Pomerol 0.75L

Pomerol is one of the smallest and most coveted appellations in Bordeaux — and Château Certan de May is one of those estates that has spoken for itself here for generations. The winery is located in the heart of the plateau, directly next to Vieux Château Certan and Pétrus, on a soil of clayey gravel and blue clay, which gives the Cabernet Franc a depth that is rare in this appellation.

Cabernet Franc forms the soul of this wine — a grape variety that plays differently in Pomerol than in nearby Saint-Émilion: earthier, spicier, with an almost mineral tension. In the glass, aromas of blackberry and black plum appear, underpinned by violets, graphite, and a hint of tobacco. The palate is dense, with firmly integrated tannins and a fresh acidity structure that gives the wine length and pull. The finish remains long, with a spicy, slightly mineral aftertaste.

You should best serve it at 16–18 °C, after a short decanting time of at least one hour. It unfolds its full potential with rack of lamb with herb crust, entrecôte, or an aged Époisses.
