Cervaro della Sala is considered a benchmark wine for dry white wines from central Italy — a cuvée of Chardonnay and Grechetto that shows what Umbria can achieve in the white wine segment.
Castello della Sala is located in southwestern Umbria, near Orvieto, at an altitude of approximately 400 meters. The winery belongs to the Antinori family and has been consistently focused on producing international-quality white wines since the 1980s. The Cervaro is its flagship wine: a Chardonnay blend with a touch of Grechetto, aged for five months in new barriques.
In the glass, it displays ripe yellow pear, white peach, and a hint of roasted almond from the oak aging. The texture is full-bodied, the acidity well-integrated—not an angular wine, but one with a rounded structure and a long, slightly creamy finish with a hint of vanilla.
Serving suggestion: Best served at 12–14 °C. Pairs well with lobster bisque, veal medallions in cream sauce, risotto with white truffle or strong mountain cheese. Also strong enough to be enjoyed on its own as a table wine.
