Dôle is the flagship wine of Valais—a red wine that combines Pinot Noir and Gamay, developing a unique alpine character. Cave St. Pierre in Vétroz is one of the canton's traditional cooperatives and vinifies grapes from the sun-drenched slopes along the Rhône.
In the glass, the Réserve des Administrateurs displays a rich ruby red color. The nose is dominated by black cherry and blackberry, underpinned by a hint of dried herbs—typical of the Valais mountain air and the region's gneiss and limestone soils. On the palate, it is soft and rounded, with fine, well-integrated tannins and a moderate acidity that keeps the wine lively without being harsh. The finish is medium-long, fruity, and slightly spicy.
It's best enjoyed now, slightly chilled at 16–17 °C . It pairs well with Valais raclette or fondue, pan-seared lamb loin with rosemary, or a plate of mature mountain cheese. It also makes a great, uncomplicated red wine to accompany a barbecue.
